Wine, unlike other beverages, actually complements food and food complements wine. Your most sensitive taste sensor is the tongue. It is made up of thousands of tiny taste buds that are shaped like a mushroom, a stem with a cap that overhangs on top. As you eat, your taste buds trap food between the stem and the cap, blotting out the bud's ability to taste. Your taste buds get overloaded and thus, the food seems to lose its flavor. Wine's naturally high acidity cleanses those taste buds better than anything else. Wines referred to as "food wines" tend to have a higher acidity, making them too tart to drink on their own. That acidity cleanses the palate and prepares it to accept the next bite of food.

Thanks for the overview related to Spanish wines. I too am always interested in learning more about wines and appreciate the chance to increase my knowledge. Oddly enough, my wife and I just enjoyed a bottle of Spanish sparkling wine last night!

Recently a friend and I made a trek through northern Illinois and the Chicago area doing some wine tasting. I was surprised by the number of great wineries in the area. I would recommend you do the same sometime if you are in the area.

Such a nice event. It was a pleasure to get to taste such fine wines. I also like that someone had to the mind to get a tent rental since that sun was extremely hot that day, even towards the end of the evening. A pleasure-fill day for sure!

Going to North Fork sounds like a lot of fun with wine tasting and historical bed and breakfasts. There must be other historical homes as well to just walk around and see. I can't wait to try out your wine suggestions you mentioned. You both have a very interesting life working together the way you do.

I have had the 2005 Mendel Unus Mendoza and it was delicious. It is hard to find a wine that combines both blackberry and blueberry and not be overpowering. I always get at least a case when I am in the area.
